DIRTY RICE 
1 lb. chicken gizzards
1/4 lb. chicken livers
1/2 lb. ground pork
1 lb. ground beef
1/4 c. oil
1 c. chopped onions
8 cloves garlic, finely chopped
1 c. chopped celery
1/2 c. chopped green onions with tops
1/4 c. chopped parsley
1 tsp. Worcestershire sauce
4 c. cooked rice
Salt, red and black pepper to taste

Put gizzards and livers in separate saucepan; cover with water and simmer until tender. Chop fine and put in separate containers. Saute ground meat in oil until well done. Add gizzards and simmer about 15 minutes. Add onion, garlic, celery, and green onions. Cook until tender. Add livers, parsley, Worcestershire sauce, salt, and pepper. Mix in cooked rice. Serves 12-14.
