1 med. eggplant, peeled and chopped
1 med. onion
1 tbsp. olive oil
1 lb. ground beef
Salt and pepper to taste
1 c. cooked rice
1 bell pepper, chopped
1/3 tsp. garlic salt
Tabasco to taste

Saute onion in oil and remove. Brown beef well and drain. Cook the eggplant 5 to 6 minutes with pepper and garlic. Return onion and beef to pan. Cover and cook for 10 minutes. Remove lid, add rice and seasonings.

Remove lid, add rice and seasonings. Cook 10 more minutes. Chop a few tomato and add to pan. Heat and serve.
