DIRTY RICE | |
1 1/2 lb. ground chuck, beef 1 lb. pork sausage 1/4 lb. chicken liners, chopped while partially frozen 1/3 c. shortening (Crisco) 2 onions, cut up 1 bunch green onions, cut up 4 cloves of garlic, cut up 1 tsp. Worcestershire sauce 1 tsp. cayenne pepper 1/2 tsp. salt or more to taste 1/4 bunch parsley 2 c. cooked rice Brown ground meat and pork sausage, drain excess fat. Add chopped chicken liners. Cook and stir well; drain off fat; set aside. NOTE: saute onions in shortening until transparent. Add garlic, green onions, parsley, and simmer a few minutes, add this to meat mixture. Add Worcestershire sauce, salt, and cayenne, and 1 1/2 to 2 cups of water; simmer 30 minutes. Cover and cook 2 cups of rice while your meat and vegetables are cooking. Add cooked rice to meat mixture and fluff well; make in large pot or frying pan. |
