SCALLOPS WITH MUSHROOMS 
1/2 c. butter
1 c. thinly sliced mushrooms
3 tbsp. finely chopped onions
1 tbsp. garlic
1 lb. bay scallops
1/2 c. flavored bread crumbs
1/2 c. chopped parsley
Salt and pepper

Preheat oven to 450 degrees. Melt 1/4 cup butter in skillet; add mushrooms. Stir until wilted and give up their liquid. Add onions and garlic. Put mixture in bowl, let cool, then add 2 tablespoons of butter, scallops, bread crumbs, parsley, salt, and pepper. Blend.

Put in baking dish. Add rest of melted butter. Bake 10 minutes. Run under the broiler until top is brown, about 1 minute. Can be served in shells. Makes 6 servings.
