SCALLOPED MUSHROOMS 
3 lbs. button mushrooms
1/2 c. butter
1 c. half and half
1 tsp. pepper
1/8 tsp. cayenne pepper
3 c. Monterey Jack cheese, shredded

In a large frying pan, rapidly simmer mushrooms and onions (cut up, if desired) in butter, about 15 minutes. Add cream and simmer rapidly until liquid is almost gone. Add salt, pepper and cayenne pepper. Spoon mixture into shallow casserole. Cover generously with shredded cheese. Bake in hot oven at 400 degrees, until cheese is melted and browned, about 10 minutes.

This recipe can be prepared the day before except for adding cheese.
