SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach, thawed & drained
2 c. Pepperidge Farm herb stuffing mix
1 lg. onion, diced
4 eggs
1/2 c. Parmesan cheese
3/4 c. melted butter
1 1/2 tsp. thyme
1 clove garlic, minced

mix all ingredients together; chill 2 hours or more. Shape into balls. Freeze or refrigerate. (Can be frozen on a cookie sheet and then bagged.)

Bake 30 minutes at 300 degrees or 3 minutes in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
