SPINACH BALLS 
2 pkg. frozen, chopped spinach, cooked and drained
2 c. stuffing or croutons
4 eggs, beaten
3/4 c. melted butter
1 sm. onion, chopped
1/2 c. Parmesan cheese
1/2 tsp. salt
1/2 tsp. garlic powder

Mix ingredients together. Cover and let sit in refrigerator overnight. Roll into balls the size of walnuts and bake on ungreased cookie sheet at 350°F for 15 minutes.

You can also wrap each ball in 1/2 strip of bacon and bake for 30-35 minutes.
