HOT SPINACH BALLS 
4 lg. eggs
2 (10 oz.) pkgs. frozen chopped spinach, cooked and thoroughly squeezed dry
1 c. minced onion
3/4 c. fresh grated Parmesan cheese
3/4 c. lightly salted butter, melted
1/2 tsp. salt
1/2 tsp. thyme leaves
1/4 tsp. black pepper
1/4 tsp. nutmeg
2 1/2 c. herb seasoned cubed stuffing mix

Beat eggs in large bowl. Add all ingredients, except stuffing mix. When well blended, add stuffing and let stand 20 minutes. Shape into balls, using a teaspoon for each. Place on ungreased baking sheet. Bake at 350 degrees for 20 minutes until hot and lightly browned.
