DIRTY RICE 
2 lb. pork loin
1 c. chopped onions
1/2 c. chopped green bell peppers
1/2 c. chopped green onion tops
1/2 c. chopped celery
1 1/2 c. rice
1 tsp. parsley
1 clove chopped garlic
3 tbsp. cooking oil
1/2 c. flour
Salt & pepper to taste

Brown meat in skillet of your choice with cooking oil. Set aside, take chopped green bell pepper, celery, parsley, garlic and saute.

Make Rue or Gravy: Brown flour in oil using hot water. Cook until medium thick. Then add all ingredients to meat and rice. Let cook until all juice are gone from meat and rice. Add green onion, onion tops at last 10 minutes of cooking. Let simmer about 20 minutes. Salt and pepper to taste.
