CHICKEN "A LA MINA" OR SWEET &
SOUR CHICKEN
 
2 chickens, cut up
2 (8 oz.) bottles Russian Dressing (Wishbone)
1 (10 oz.) jar apricot preserves
1 pkg. dry onion soup mix

Mix Russian dressing, preserves and onion soup mix. Salt chicken. Place in baking dish. Pour dressing over all chicken. Bake at 350 degrees for 1 1/2 hours. Baste and turn once. Serve over rice. Pour pan drippings over all.
