MEXICAN CORNBREAD CASSEROLE 
1 c. yellow cornmeal
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 can cream style corn
1/2 c. oil
1 c. milk

LAYERS:

(1) 1 pound hamburger meat (browned)

(2) 1 pound Cheddar cheese, grated

(3) 1 medium onion, chopped

(4) 3-4 jalapeno peppers, diced (optional)

Mix all ingredients in dough together and pour into a greased 9x11 glass pan. Layer evenly, 1, 2, 3 and 4. Pour last half of dough evenly over top. Cook in preheated oven at 350 degrees for 1 hour.
