ELLEN'S INDIAN PUDDING 
2 qt. milk
2 eggs
3/4 c. molasses + 1/4 c. sugar or 1 c. molasses
3 tbsp. cornmeal
1 tsp. cinnamon
1/2 tsp. salt
1 c. dates
1 tbsp. vanilla

Scald the milk. Beat eggs well and add remaining ingredients. Add egg mixture to milk. Bake for 2 to 3 hours, until knife comes out clean when inserted. If soft pudding is desired, add milk as pudding bakes.
