GINGERBREAD MUFFINS | |
1 1/2 c. flour 1/2 c. whole wheat flour 1/2 c. firmly packed light brown sugar 1 tbsp. ground ginger 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. salt 2 lg. eggs 3/4 c. milk 1/2 c. melted butter 1/4 c. light molasses 1/2 c. golden raisins In large bowl, combine all-purpose and wheat flour, brown sugar, ginger, baking soda, salt, cinnamon, and nutmeg. In medium bowl, whisk eggs, milk, melted butter, and molasses until well blended. Pour liquid ingredients into dry ingredients; add raisins, stirring just until mixed. Spoon batter evenly in 12 greased 2 1/2 inch muffin cups. Bake in a preheated oven at 400 degrees for 20 minutes or until golden brown. Yield: 12 muffins. |
