SWISS COFFEE CAKE | |
1 c. sugar 1/2 c. butter (1 cube) 1 1/2 c. flour 1 c. buttermilk 1 tsp. baking soda 1 c. raisins or 1/2 c. chopped nuts and 1/2 c. chopped dates or diced apple 1 tsp. vanilla 1 tsp. cinnamon Sift flour, sugar and cinnamon together, using hands. Mix butter into flour mixture until like cornmeal, again using hands. Reserve 1 cup of flour mixture for topping. Then hand stir in buttermilk, vanilla and soda. Add fruit and nuts. Stir just until mixed. Spread into 2 greased 8 inch pans. Sprinkle on topping. Bake in 400 degree oven for 20 minutes. |
