SWISS CAKES 
1 c. grated Swiss cheese
1/2 tsp. grated lemon rind
Dash pepper
2/3 c. sour cream
3 beaten egg yolks
2 1/2 tbsp. flour

In a bowl combine cheese, flour, lemon rind, and pepper. Add sour cream and beaten egg yolks. With a teaspoon drop batter onto a hot greased griddle. When surface is bubbly, turn carefully. Brown on other side; drain on absorbent paper. Serve immediately. Serves 4.
