CORNED - BEEF PATTIES 
2 tbsp. butter
1/4 c. chopped onion
2 tbsp. flour
1 1/4 c. cooked corned-beef
Canned tomatoes
Dash of black pepper

PASTRY:

2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
6 tbsp. Crisco shortening
1 egg yolk
1/3 c. milk

Preheat oven to 425 degrees.

FILLING: Melt butter, add onion and cook slowly until onion is soft, not brown. Add flour and stir well blended; add remaining ingredients and bring to a boil, stirring constantly until thick and smooth. Let simmer about 10 minutes.

PASTRY: Sift dry ingredients, add shortening and mix like pie dough. Add egg yolk to milk, mix, then add to dry mixture to form soft dough. Turn out on floured board and toss lightly until smooth. Roll dough and cut pieces about 5 inches square to fit in muffin pans. Fill each with Corned-Beef Filling and fold pastry edges over to center, covering Filling. Bake at 425 degrees for about 20 minutes. Makes 8 patties.
