CORN - BEEF - EGG PATTIES | |
1 (12 oz.) can corn beef 1/3 c. minced celery 2 tbsp. minced onion 5 eggs 1/2 tsp. salt 1 tbsp. salad oil 2 English muffins (split & toasted) Put chopped corn beef, celery, onion and 1 egg in bowl. With hands firmly shape into 4 patties. Fry patties in oil until lightly browned. Turn once. With spoon make an indentation in center of each patty, break egg into center. Cover and cook 10-15 minutes, until eggs are done. Serve a patty on each muffin half. Makes 4 servings. |
