FRUIT BREAD 
This is a high fiber, no fat, low calorie, delicious, and nutritious bread. It's also easy to make in a food processor.

Process in food processor for 20 seconds: spice (or 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. allspice) 1 tsp. baking soda 2 tsp. baking powder 1/2 tsp. salt 2 c. all-purpose flour (can substitute 1/2 c. oatmeal flour or 1/2 c. wheat germ for 1/2 c. of the flour)

Pour into a large mixing bowl. Add: 1/2 c. chopped nuts (opt.)

Mix into flour mixture to coat raisins and nuts. Process in food processor until smooth: 2 eggs or equivalent egg substitute 1 tsp. vanilla 1/4 c. skim milk 2 unpeeled apples, cored, cut in sm. chunks 3 tbsp. honey or fructose syrup or 9 tsp. sugar

Add fruit mixture to flour mixture in mixing bowl, stir to mix. Spoon batter into loaf pan sprayed with cooking spray. Bake in preheated 375 degree oven for 40 to 45 minutes. This makes 20 slices, about 90 calories per slice. It freezes well.
