POTATO OMELET 
1/2 c. onion, chopped
1/4 c. shortening
3 lg. potatoes (peeled and thinly sliced)
5 eggs, beaten
Salt and pepper

Cook onions in shortening until translucent; add potatoes, cook covered about 18 minutes, stirring occasionally. Pour in eggs; add seasoning to taste. Cook without stirring until mixture begins to set on bottom and around the edges. Lift mixture so uncooked portion flows underneath. Cook about 3 minutes more or until done but still moist. Serves 4.
