MAYONNAISE SLENDER (LIGHT) 
1 egg
1 c. safflower oil
1/4 tsp. dry mustard
2 tbsp. lemon juice or vinegar
Salt, to taste

Blend 1/4 cup of the oil with other ingredients for 10 seconds. Slowly pour in remaining oil until blended. May be used in chicken or seafood salads. Calories per serving = 30 (1 tablespoon).
