REALLY GOOD CURRIED IN FOIL
CHICKEN
 
1 c. very thinly sliced carrots
1 c. very thinly sliced zucchini
2 tbsp. water
2 tbsp. sherry
4 skinless boned chicken breasts (about 5 oz. each)
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chutney
2 tbsp. curry
1/4 c. unsalted peanuts
1 tbsp. (plus) coconut

Tear 4 (14x12) rectangles of aluminum foil. Butter foil. Place 1/4 of the veggies on each piece. Set chicken on top. Sprinkle with liquid and salt and pepper. Mix chutney, curry, peanuts, and coconut and spoon a little on each chicken piece.

SEAL PACKETS WELL. Place your baking sheet in hot (500 degree) oven for 2 minutes. Then bake the foil packets in hot oven (500 degrees) for 10 minutes.
