IMPOSSIBLE MEXICAN PIE 
1 lb. ground beef
1/2 c. chopped onion
1 env. taco seasoning mix
1/2 can (4 oz.) chopped green chilies, drained
1 c. shredded Monterey Jack cheese
3 eggs
3/4 c. buttermilk baking mix
1 1/2 c. milk
1/8 tsp. red pepper

Brown ground beef with onion in skillet, stirring until crumbly. Drain well. Stir in taco seasoning mix. Spread in greased 10 inch pie plate. Sprinkle with the green chilies and cheese.

Combine eggs and remaining ingredients in mixer bowl. Beat for 1 minute. Pour over cheese. Bake at 400 degrees F. for 25-30 minutes or until knife inserted near center comes out clean. Let stand for 5 minutes before serving.
