MOTHER'S HUSH PUPPIES 
1 1/2 c. white cornmeal
1/2 c. sifted all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. salt
1/2- 1 c. minced onion
1/2 c. minced bell pepper
1/2 c. minced celery
1/2-1 c. buttermilk
1 lg. egg, beaten
1/4 c. bacon drippings or Crisco, very hot

Mix first 8 ingredients. Stir in enough buttermilk to make a very thick batter. Stir in beaten egg; mix well. Stir in hot fat and mix well. Batter should be thick. Add more milk if needed.

Drop by teaspoon into deep hot oil. Batter will go to bottom and brown on other side (Hush Puppies should be the size of a golf ball or a little smaller). Drain on paper towels.

For a taste treat, add 2 to 3 minced jalapeno peppers or 4 to 5 minced shrimp or canned whole shrimp.
