PUFFY BUTTERMILK ONION RINGS 
2 eggs, separated
1 1/4 c. buttermilk
1 1/2 tbsp. salad oil
1 1/4 c. all-purpose flour
1 tsp. salt
1 1/4 tsp. baking powder
2 GA sweet onions

Remove skins and slice onions 1/2 inch thick. Separate into rings. Beat egg yolks, add buttermilk, oil and sifted dry ingredients. Beat egg whites until stiff, fold into buttermilk mixture. Dip onion rings into batter. Fry a few at a time in deep fat heated to 375 degrees. Drain thoroughly on paper towels and sprinkle with salt. When ready to serve, place on baking sheet. Heat at 450 degrees for 5 minutes. NOTE: May be frozen.
