MUFFINS 
2 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
3 tbsp. sugar
1 egg, beaten
1 c. milk
3 tbsp. melted shortening

Mix and sift dry ingredients. Combine egg, milk and shortening and add to flour mixture, stirring only until mixed. Use tablespoon to dip batter into muffin tins. Fill only 2/3 full.

Bake in hot oven at 450°F for 20 to 30 minutes.

Yields 1 dozen.

Modifications:

Blueberry: Add 1 cup fresh blueberries into dry ingredients.

Nut: Add 1/2 cup coarsely chopped nuts to dry ingredients.

Bacon or Ham: Reduce sugar 2 tablespoons. Add 1/3 cup coarsely chopped crisp bacon or finely cut boiled ham into dry ingredients.
