MISS NEW HAMPSHIRE 
12 lg. cucumbers
2 tbsp. salt
2 tsp. white pepper
4 onions, ground
1 qt. vinegar
2 canned pimentos, diced

Peel cucumbers into halves lengthwise. Scoop out seeds with a teaspoon. Cut cucumbers into pieces and force through a food chopper, using coarse blade. Mix in salt and let stand in colander to drain for an hour. Combine with remaining ingredients. Pour into jars and seal. Yields 6 half pints.
