MOLDED SPINACH SALAD 
1 sm. pkg. lemon Jello
1 1/2 tbsp. vinegar
1/2 c. mayonnaise or salad dressing
1/4 tsp. salt
1/3 c. chopped celery
1 tbsp. minced onions
1 (10 oz.) pkg. frozen spinach, the chopped kind (thawed and well drained, about 1 c.)
3/4 c. cottage cheese

Dissolve Jello in 3/4 cup boiling water. Add 1 cup cold water. Add mayonnaise, vinegar and salt. Put in refrigerator and chill until set 1 inch around sides of bowl.

Take out and beat until fluffy. Add celery, onion, spinach and cottage cheese. Place in a 1 quart mold and chill in refrigerator until firm. Best made a day ahead of time to allow for better flavor. Serves 6.
