SWEET POTATO CAKE 
1 1/2 c. oil
2 c. sugar
4 eggs
4 tbsp. hot water
2 1/2 c. flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw sweet potato
1 c. chopped pecans
1 tsp. vanilla

Beat oil and sugar until smooth. Add eggs, one at a time. Add hot water and beat well. Sift together and add the flour, baking powder, salt, cinnamon and nutmeg. Stir in sweet potatoes, pecans and vanilla. Bake in bundt pan, greased and floured, at 350 degrees for 1 hour or until done. Frost with icing.

ICING:

1 can evaporated milk
1 c. sugar
1 stick butter
3 egg yolks
1 can coconut

Boil together until thickened the first four ingredients. Add coconut.
