1 c. oil (Crisco oil)
2 c. sugar
3 eggs
2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
3 c. chopped apples (peeled)
1/2 c. raisins (optional)
1/2 c. nuts

Mix sugar, oil and eggs. Add dry ingredients, mix thoroughy. Stir in vanilla, apples, raisins, and nuts. Pour into ungreased cake pan 9 x 12.

Bake at 350 degrees for 40 to 45 minutes.

ICING:

1/2 stick butter (butter)
1/4 c. evaporated milk
1 c. brown sugar
1 c. coconut

Heat until butter is melted, add coconut. Pour over hot cake, put back into oven until bubbly and brown.
