1 (2 layer size) pkg. yellow cake mix
1 (4 serving size) pkg. Jello vanilla instant pudding
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. applesauce
1/2 c. water
1/4 c. oil
4 eggs
1/2 c. finely chopped apples (optional)

Combine all ingredients in large mixer bowl. Blend. Then beat at medium speed for 4 minutes. Pour into 2 greased and floured 8 x 4 inch loaf pans. Bake at 350 degrees for 50-55 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove.
