ZUCCHINI CASSEROLE 
2-3 lbs. zucchini, boiled and mashed
1 md. onion (sauteed)
1 or 2 cloves garlic, chopped (sauteed)
1/4 lb. Cheddar or sharp cheese, grated
2 slices toasted bread, broken up
2 eggs

Combine everything in buttered casserole. Season with salt and pepper and bake 325 degrees 45 minutes.
