STEAK WITH WATERCRESS SAUCE 
1 bunch watercress
1/3 c. grated Parmesan cheese
1/4 c. whole natural almonds
1/4 c. olive oil
1 sm. garlic clove
Salt
1 beef flank steak (about 2 lbs.)
Pepper
Sour cream

1. Remove tough stems from watercress; reserve several sprigs for garnish. In food processor with knife blade attached, blend Parmesan cheese, almonds, olive oil, garlic, 1/4 teaspoon salt, and remaining watercress until almost smooth.

2. Preheat broiler if manufacturer directs. Score both sides of steak; place on rack in broiling pan. Place pan in broiler at closest position to source of heat; broil 10 minutes for rare, turning once. Sprinkle with salt and pepper.

3. To serve, place steak on warm platter. Thinly slice steak. Spoon watercress sauce into small bowl; top with sour cream. Garnish with reserved watercress. Makes 6 servings. About 375 calories per serving.
