FRESH APPLE NUT LOAF 
4 c. peeled, chopped apples
1 c. chopped pecans
2 c. sugar
3 c. all-purpose flour
2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
3/4 tsp. ground cinnamon
1 c. butter, melted
2 tsp. vanilla extract
2 eggs, slightly beaten

Combine apples, pecans, and sugar; mix well. Let stand 1 hour or longer, stirring often; do not drain.

Combine flour, soda, salt, and spices in a large bowl, mixing well; add apple mixture, stirring well. Stir in butter, vanilla, and eggs and mix until thoroughly combined.

Spoon the batter into 2 greased and floured loaf pans. Bake at 325 degrees for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan to complete cooling. Yield: 2 loaves.

Submitted to Brazzel Family Cookbook by Debra Brazzel. This recipe is from SOUTHERN LIVING 1982 ANNUAL RECIPES. I often double this recipe and give apple nut loaves to friends for Christmas. Serve slices of apple bread heated in the microwave with butter for a quick and delicious breakfast.

Since microwave ovens vary in power, you may need to adjust your cooking time.
