CRANBERRY MOUSSE 
1 c. sugar
2 env. of unflavored gelatin
1 c. cranberry juice
3 c. fresh cranberries
1/2 tsp. shredded orange peel
1 1/4 oz. envelope whipped dessert topping mix
1/2 c. skim milk

Cook in saucepan sugar, gelatin and cranberry juice until gelatin dissolves, add cranberries and orange peel bring to a boil, reduce heat. Simmer (covered) 5 minutes or until cranberry skins pop. Chill mixture in large bowl until thicken, stir once or twice. Prepare dessert topping according to directions on package. Beat cranberry mixture for 2 minutes on medium speed. Fold in whipped topping. Spoon into dessert dishes. Chill several hours until set. Serves 8.

DIETITIAN'S NOTE:

This recipe can be lightened without adding any extra work. Use one of the "lite" or sugar free whipped topping mixes and use 1/4 cup sugar and 9 packets Sweet One sugar substitute.
