CRANBERRY MOUSSE 
1 c. sugar
2 env. unflavored gelatin
1 c. cranberry juice
3 c. fresh cranberries
1/2 tsp. finely shredded orange peel
1 (1.4 oz.) env. whipped dessert topping mix
1/2 c. skim milk

In saucepan combine sugar and gelatin. Add cranberry juice. Cook and stir over medium heat until gelatin dissolves. Add cranberries and peel. Bring to boiling; reduce heat. Simmer, covered, 5 minutes or until cranberry skins pop. Transfer mixture to a large bowl and chill until thickened, stirring occasionally. Prepare dessert topping, using the skim milk, according to package directions. Remove cranberry mixture from refrigerator. Beat on medium speed 2 minutes. Fold mixture into whipped topping. Spoon into dessert dishes. Chill several hours or until set.

Serves 8.
