PUMPKIN COOKIES 
2 c. sugar
2 c. shortening
1 (16 oz.) can pumpkin
2 eggs
2 tsp. vanilla
4 c. sifted flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. allspice
2 c. raisins, (optional)

Cream sugar and shortening, add pumpkin, eggs, and vanilla. Add dry ingredients to creamed mixture and stir well. Add raisins and nuts if desired. Drop 2 inches apart on greased cookie sheets. Bake at 350 degrees for 12 to 15 minutes. Makes 7 dozen.
