PUMPKIN NUT COOKIES 
1/4 c. shortening
1/2 c. sugar
1 egg, beaten
1/2 c. Libby's pumpkin
1 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ginger
1/2 c. raisins
1/2 c. chopped nuts

Cream shortening; add sugar gradually. Cream until light and fluffy. Add egg and pumpkin; mix well. Sift flour, baking powder, salt and spices together. Stir in dry ingredients and mix until blended. Add raisins and nuts. Drop by teaspoonfuls on greased cookie sheets. Bake in a moderate oven (350 degrees) for approximately 15 minutes. Makes 2 dozen cookies.
