FRESH PEA AND MUSHROOM CASSEROLE 
1 c. sliced mushrooms (8 oz. can)
2 tbsp. chopped onion
3 tbsp. oil or butter
2 c. hot cooked brown rice
1 (10 oz.) pkg. frozen peas
1/2 tsp. garlic salt
2 tbsp. oil or butter

Brown slightly the mushrooms and onions in the oil. Combine with hot cooked rice and place in casserole. Top with thawed peas and dot with butter or oil. Bake for 15 minutes in oven at 350 degrees. Yield 5 cups.
