FAMILY STYLE WHITE BREAD
Makes 2 loaves.

1 c. warm milk or skim
3 tbsp. sugar or honey
1/3 c. Wesson oil
1 c. warm water
1 1/4 tbsp. yeast and a little sugar
6 to 6 1/2 c. flour

Heat milk to just boiling. Remove from heat, stir in sugar, salt and Wesson oil. Cool to lukewarm. Measure water into 3 quart bowl. Sprinkle in yeast, stir until dissolved. Add lukewarm milk mixture. Sift 3 cups flour over yeast mixture, stirring, then beat until smooth. Add rest of flour to make soft dough. Turn on floured board.

Knead until smooth and elastic. Place into oiled bowl. Brush top with Wesson, cover, let rise until double in bulk (1 1/2 hours). Oil hands; punch down; turn onto floured board. Divide dough in half. Put in pans and let rise 1 more time, about 1 hour. Bake at 400 degrees for 50 minutes. 60 calories per thin slice when skim milk is used. Note: If salt is omitted, dough rises faster.
