CHEESY BACON CORN-CORN BREAD | |
1 lb. bacon, fried them crumbled 1 lb. Cheddar cheese, grated 2 eggs, slightly beaten 1 1/4 c. milk 1/4 c. melted shortening 1 1/2 c. yellow cornmeal 3/4 c. sifted flour 2 tbsp. sugar, if desired 2 1/2 tsp. baking powder 1 (15 oz.) can whole kernel corn, drained Beat eggs and add milk and shortening. Sift dry ingredients together, add to egg mixture and beat well. Add bacon, cheese and corn, stir lightly to mix, but do not beat. Pour into greased shallow pan and bake in hot oven, 400 degrees, until it shrinks from sides of pan, about 30 to 40 minutes. |
