SKILLET POTATOES 
3 tbsp. butter
1 c. vegetable - choose one: celery, mushrooms, green bean
1 c. vegetable - choose one: chopped onion, green or red pepper
2 cloves garlic, minced
1 (10 3/4 oz.) can condensed chicken broth
1/4 c. water
1 c. carrots, cut in strips
4 c. cubed potato
Seasoning to taste

In skillet over medium heat, cook butter, garlic, and vegetables until tender. Add water, broth, carrots, potatoes, and seasonings to skillet. Heat to boiling; reduce heat and cover; simmer 15 minutes or until potatoes are tender. Uncover and simmer 5 minutes or until broth is slightly thickened. Stir often; garnish with parsley. Also try adding Kielbasa sausage or turkey chunks or chicken. Serves 6 (only 150 calories). Excellent dish.
