SOUTHERN EGG BREAD (Hencely
Style)
 
1 c. fine corn meal (Hoovers)
1 c. flour
1/4 c. sugar
1 tsp. salt
4 eggs
1 c. buttermilk
1/3 c. peanut oil
3 tbsp. baking powder

Mix all dry ingredients in large bowl. In another bowl, place eggs; beat at low speed for 2 minutes. Add peanut oil and buttermilk; stir slightly. Pour eggs, oil and milk into dry ingredients and stir well. Place in well greased cast iron frying pan. Cook for 20-25 minutes at 425 degrees. Often times I put 6 eggs in this bread, and put lots of butter on top after it is done.

Thank you for posting this recipe. I live in a small southern town and had a conversation with an older gentleman today who raved about "southern egg bread". I searched and searched for a recipe and finally found this one. It looks just like what he described. I can't wait to try it!
