SOUTHERN EGG BREAD (Hencely Style) | |
1 c. fine corn meal (Hoovers) 1 c. flour 1/4 c. sugar 1 tsp. salt 4 eggs 1 c. buttermilk 1/3 c. peanut oil 3 tbsp. baking powder Mix all dry ingredients in large bowl. In another bowl, place eggs; beat at low speed for 2 minutes. Add peanut oil and buttermilk; stir slightly. Pour eggs, oil and milk into dry ingredients and stir well. Place in well greased cast iron frying pan. Cook for 20-25 minutes at 425 degrees. Often times I put 6 eggs in this bread, and put lots of butter on top after it is done. |
