OVEN- FRIED CHICKEN 
1 1/2 c. pancake mix
1 tsp. salt
2 tsp. paprika
1/2 tsp. onion salt
1/2 tsp. garlic powder
1/4 tsp. pepper
1/2 c. milk
2 eggs, beaten
1 (2 1/2 to 3 lb.) broiler-fryer, cut up & skinned
1/3 c. butter, melted

Combine first 6 ingredients; set aside 1/2 cup. Store remaining mix in an airtight container for later uses.

Combine milk and eggs. Dip chicken in egg mixture; then dredge in 1/2 cup pancake mixture. Place chicken on a rack in a shallow baking pan; drizzle with melted butter. Bake, uncovered, at 350 degrees for 1 hour or until done. Yield: 4 servings.
