OVEN - FRIED POTATOES 
3 lg. unpeeled potatoes, scrubbed
2 tbsp. cold pressed safflower oil
2 tsp. salt free vegetable seasoning
1 1/2 tsp. onion powder
Black pepper to taste
Paprika to taste
1/2 tsp. chili powder (optional)
1 tsp. grated Parmesan cheese (optional)

Cut potatoes into 1/8 inch thick slices. Place potatoes in a bowl with oil and mix thoroughly. Spread potato slices on a nonstick baking sheet. Sprinkle with half the seasonings. Place in preheated 450 degree oven for 10 minutes, turn potatoes season and continue cooking for 5-10 minutes or until golden brown. Remove and sprinkle with Parmesan cheese. Serve immediately.
