APPLE DUMPLINGS 
Make pie dough, chill. Core, then peel, 6 apples (any good baking apples). Roll egg sized balls of pastry into squares. Place whole apple in center of each square. Fill center of apple with cinnamon/sugar mixture (1/2 cup sugar mixed with 1 teaspoon cinnamon). Divide 1 1/2 tablespoons butter into 6 equal pieces. Place 1 piece on top of each filled apple. Pull up corners of pastry, overlapping them on top of apple. Place in baking dish 13x9. Make syrup by boiling together for 3 minutes 2 cups water, 1 cup sugar, 4 tablespoons butter, 1/4 teaspoon cinnamon. Pour over dumplings. Bake in preheated 425 degree oven about 40 minutes or until golden brown.

Great served with ice cream. Good served hot or cold.

My mom made these often when I was growing up. I started making them for my family, who loved them. About 8 or 9 years ago, I bagan making them for our choir's Christmas paty and they've now become a favorite tradition at our church. I usually make at least 3 dozen! These can be frozen. Place dough wrapped apples in pan, cover well and freeze. When ready to bake, remove from freezer, make syrup, pour over frozen dumplings and bake as directed.
