APPLE DUMPLINGS | |
2 c. all purpose flour 2 tsp. baking powder 1 tsp. salt 3/4 c. shortening 1/2 c. milk 6 med. baking apples, pared and cut into quarters 6 tbsp. sugar Ground cinnamon Ground nutmeg Syrup (below) Whipping cream Heat oven to 375 degrees. Mix flour, baking powder and salt. Cut in shortening. Stir in milk until all flour is moistened. Gather pastry into ball. Roll 2/3 of the pastry into 14 inch square on generously floured cloth covered board with floured stockinet-covered rolling pin; cut into 4 squares. Roll remaining pastry into rectangle, 14 x 7 inches; cut into squares. Place 4 apple quarters on each pastry square. Sprinkle each with 1 tablespoon sugar, the cinnamon and nutmeg. Bring corners of pastry up over apple and press together. Place dumpling in ungreased baking pan, 13 x 9 x 2 inches. Pour Syrup over dumplings. Bake until crust is golden and apples are tender, about 45 minutes. Spoon Syrup over dumplings. Serve warm with cream. 6 servings. SYRUP: 2 c. sugar 1/4 tsp. ground cinnamon 1/4 tsp. ground nutmeg 2 c. water 1/4 c. butter Heat sugar, spices and water to boiling. Remove from heat; stir in butter. |
