APPLE RAISIN CAKE 
1/2 c. shortening (Mazola oil)
3/4 c. sugar
1 egg
1 c. canned applesauce
2 c. sifted cake flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. grated orange peel
1 c. seedless raisins
3/4 c. chopped nuts

Cream shortening and sugar together. Beat in egg. Blend in applesauce mixture and flour. Stir in orange peel, raisins, and nuts. Turn into greased loaf pan 8 1/2 x 4 1/2 x 2 1/2 inches. Bake in moderate oven (325 or 300 degrees) about 1 hour. Cool in pan. Frost with powdered sugar icing.
