APPLE BARS 
1 c. plus 2 tbsp. shortening
2 3/4 c. unbleached flour
1 tsp. salt
Milk
1 egg yolk, save white
1 c. crushed Wheaties
7-8 c. thinly sliced apples
2/3 c. white sugar
1/2 tsp. cinnamon
1/4 tsp. allspice
3 tbsp. finely chopped nuts
1-2 tbsp. water
1/2 tsp. vanilla
1 c. powdered sugar

Cut shortening and salt into flour until consistency of peas. Add enough milk to make egg yolk equal 2/3 cup; stir. Stir milk into flour and make 2 balls. Roll out as pie dough on floured board, or between wax paper, to fit 15 x 10 inch jelly roll pan. Place bottom crust in pan. Sprinkle crushed Wheaties on bottom crust.

Mix apples, sugar and spices, spread over crushed Wheaties. Place top crust over all, seal all edges.

Beat egg white to soft peaks, brush over top crust. Bake at 350 degrees for 55-60 minutes. Frost when cool with powdered sugar, vanilla and water glaze. Sprinkle crushed nuts over all.
