POCKET SLOPPY JOES
1 lb. ground beef
1 sm. onion, chopped
1/3 c. chopped celery
1 (6 oz.) can tomato paste
1/4 c. ketchup
1 tbsp. vinegar
2 tsp. Worcestershire sauce
1/2 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. pepper
4 (6 inch) pocket bread rounds

Combine beef, onion and celery in a large glass mixing bowl or baking dish, stirring to crumble beef. Cover tightly, and microwave on HIGH 5 1/2 to 6 1/2 minutes or until beef is browned, stirring at 2 minute intervals. Drain.

Stir in remaining ingredients except bread rounds. Cover and microwave at HIGH 3 to 4 minutes or until thoroughly heated. Cut pocket bread rounds in half; fill each half with 1/3 cup meat sauce.

Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I used ground pork because it was on sale. Also added about a teaspoon of Sriracha. Turned out great, just a hint of heat.
