POTATO MUSHROOM CASSEROLE 
6 to 8 med. boiling potatoes
1/2 c. butter
2 med. onions, chopped
2 (3 oz.) cans mushroom slices
1 c. sour cream
Paprika, salt, pepper, hot milk
Reserve liquid from mushrooms

Peel and boil potatoes. Prepare other in other ingredients. Saute onions in butter until yellow. Add drained mushrooms. Saute 2 minutes. Remove onions and mushrooms. Set aside. Whip cooked potatoes, adding hot milk, mushroom liquid and seasonings. Beat in butter left in skillet. Spread thin layer of potatoes in shallow baking dish, cover with thin layer of onions, etc. Then layer of sour cream, repeat layers. Brush top with melted butter. Sprinkle with paprika. Bake at 350 degrees for 20 to 30 minutes.
